Christmassy trifle dessert thingo.

It worked and it’s YUM!

Here’s how to make your own Christmassy trifle dessert thingo.

For the sponge-

  • 1/3 cup plain flour
  • 1/3 cup self-rasiing flour
  • 1/3 cornflour
  • 4 eggs at room temp
  • 2/3 cup caster sugar

Method-

Preheat oven to 180 degrees. Beat eggs and sugar until pale, shiny and doubled its volume. Sift all flours together 3 times. Slowly sift flour onto egg mixture whilst folding it in with a big metal spoon.

Once it’s combine put it in the oven in 2 greased cake pans (I used an oval baking dish for the whole mixture) for 20 minutes. Allow to cool.

The Jelly.

  • 400ml Can of good quality berries in syrup, any work well.
  • heap teaspoon of gelatine
  • 100 ml hot water.

Method.

Dissolve gelatine in water. Stir water into canned fruit with the syrup and put into the fridge to set.

The cream.

  • 250ml thickend cream.
  • 1/2 cup icing sugar
  • 1/2 teaspoon vanilla essence

Method-

Beat the cream until thick and peaks form, add the icing mixture and vanilla, beat until thick and combined.

The meringue.

  • 4 egg whites at room temp.
  • 1 cup caster sugar
  • teaspoon cornflour
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon vanilla essence

Method-

Heat oven to 100 degrees. Beat the egg whites until thick, white and firm. Gradually add the caster sugar while beating. Beat for a further 4 or so minutes after the sugar is added until very thick, glossy and can hold stiff peaks. Add the cornflour, vinegar and vanilla essence, Beat until combined.

Spread out on baking paper lined tray to about an 1/2 to an inch thick. Place in the oven for 1 and a half hours. Then turn oven off and leave it in there until cooled.

Assembly.

Layer each one in any pattern you choose. You can make it in tumblers, glasses, or a large dish. I think they’d look cute in martini glasses or in those tall ice cream glasses. If I’d change one thing I would have put some cream in the bottom so you’ve got something moist at the end to keep digging your spoon into to get every last bit. Make sure meringue is on top so it retains its yummy crunch.

  1. Hi Christie – I do a lazy trifle – bought jam sponge roll in the bottom, sprinkle a little sherry over the top, then put sliced can peaches, pkt custard, jelly and cream on top
    Great if you’re in a hurry!
